The marriage certificate for Joseph Henry and Margaret Fogg has his father's occupation as Paper stainer. Witnesses Amelia Fogg and the parish clerk

Now as "Cheapside" is listed as Thomas' birthplace on the 1851 census, could this be a suitable marriage? Lombard Street is located in the Cheapside district of London.

Paper stainers and calico printers were very similar. One of my London ancestors was a Calico Printer.

BTW, I think that Lombard Street marriage looks pretty good, too. Is the image on Ancestry? Any witness names?
So does this mean that Sarah was from Birmingham?

I wonder if Elizabeth Oldknow, with the Davis family in 1841, was related to Francis Wood Oldknow (1756-1823)? He was buried in Battersea. Same location as Joseph Henry Davis' marriage. Coincidence?
There's an Alice Oldknow (daughter?) who died in Chelsea in 1839, age 51. Address: Lower George Street.
There's two St-Martins-in-the-Field baptisms: Alice (1788) and Frances (1790), but their parents are Francis and Sarah. Hmm.
There are two 1828 burials for a Sarah Oldknow (wife?): one at St Mary, Lambeth (Felix Street), and the other in Westminster.

In 1795, Francis Wood Oldknow was involved in a gambling matter connected to unlawful Faro card games. He was the "keeper of the bank". At the time, he lived at Conduit Street, St George Hanover Square.

Clearly there is some sort of connection with Elizabeth Oldknow and the Davis family. Isn't her occupation listed as "Ind" in the 1841 census? Was she a widow with a bit of money? Hopefully her 1842 death cert will confirm if she's related to Thomas or Sarah.

There is at least one Sarah Cox of the right age etc baptised in Birmingham

The Daniel who is witness seems to be a Daniel Weller.

Luckily I have great experience with terrible handwriting of clerks across the ages ;)

I did find that entry for Thomas & Sarah Cox, not sure if it is related?
I did some searching and found the following:

Checked out a2a site, found 10 June,1829 insured Joseph Woodward at 1 Marlborough Road Chelsea, grocer.

I must admit I am having problems finding any marriage or death/buriels. and especially like you both found living at Whiteland's.
